Brunswick Stew is perfect for these icy cold days!
My favorite cold weather comfort foods are soup and grilled cheese or stew and cornbread 🙂
This is my version of Brunswick Stew made at home which usually includes shredded chicken or shredded smoked pork. I used rotisserie chicken here because thats what I happened to have. Either one or equal parts of both are delicious also. The veggies should always be corn, baby lima beans, and tomatoes!
Ingredients
- 4 cups rotisserie chicken shredded
- 1 20 oz steakhouse seasoned potatoes diced
- 1 14.5 oz can fire roasted tomatoes diced
- 2 cups celery sliced
- 1 large onion diced
- 2 cups fresh or frozen corn
- 1 cup fresh or frozen okra sliced(optional)
- 2 cups fresh or frozen baby lima beans
- 1 32 oz box chicken broth
- 2 tbsp brown sugar
- 1 tbsp red wine vinegar
- 2 tsp salt
- 1/2 tsp garlic salt
- 1 tsp black pepper
- 3 bay leaves
Instructions
- Add all ingredients except okra to a large stock pot(I use a cast iron pot). Cook on low/medium heat for 1-2 hours. Stirring occasionally. Stir in okra about 5 mins before done.
- Taste test and adjust seasonings accordingly. Remove bay leaves before serving. This always tastes even better the next day!
Notes
I find the 20 0z. package of potatoes in the refrigerated section of the grocery store with the grated hashbrown potatoes. If not using the seasoned potatoes I would suggest adding more salt, pepper, and/or red pepper flakes. Adjust to taste preference.
