Lemon Garlic Roasted Chicken is super easy and delish!
The weather has been all over the place lately but I am convinced that spring is coming eventually… and spring is the perfect season to add a lemony garlic butter sauce to our roast chicken!
The chicken is slathered in butter that is mixed with herbs and seasonings and lots of lemon zest! Not too shabby I must say 🙂 The leftovers are really good chopped up onto a salad. A little balance in life is whats important!

Ingredients
- 1 stick butter, room temp
- 1/4 tsp garlic salt
- 1 lemon zested
- 1 tsp rosemary
- 2 tbsp parsley
- 1 garlic bulb
- 1 whole chicken, cut up
Instructions
- Preheat oven to 350 degrees. Rinse chicken and pat dry. I used a whole chicken already cut up. Place in baking dish.
- When butter is a soft and spreadable consistency mix in all seasonings except garlic bulb. Using the back of a spoon spread butter mixture over all chicken pieces.
- Slice top from the garlic bulb and spread butter mix across the top. Place in the baking dish beside chicken.
- Cover dish with tin foil. Bake about 1 hour. If using boneless chicken bake for 45-1 hour. Remove foil and broil for just a few minutes to crisp the top of the chicken. Please keep a close eye on the oven while broiling. I leave the oven door open and watch until it is done or I feel it needs to come out. Wouldn't want that butter sauce to go up in flames!
