Cabbage and carrot stir-fry is such a good “down home” side dish. The vegetables are cooked to tender crisp perfection with seasonings to enhance the flavors. The bacon is optional but adds that amazing smoky flavor that we all love. Such a great addition to any fall meal.
Tips
- Chop veggies into uniform sizes as much as possible so that they all cook evenly.
- Cook the bacon ahead and set aside.
- I like to use a wok pan to make this. Any large skillet or pan will work.
- Smoked sausage is a great substitute for the bacon.
The preparation of this dish begins with thinly sliced cabbage and carrots. These ingredients are cooked over medium high heat in a wok or a large skillet. Stir-fry with olive oil or oil of your choice until the cabbage and onions soften and caramelize slightly which brings out the sweetness of the vegetables. The carrots maintain a crisp tenderness which gives a satisfying crunch. Seasonings include rice vinegar, garlic, and a splash of soy sauce or sesame oil.
