Cheesy Irish Soda Bread is adapted from the American Irish Soda Bread recipe found here. The only difference from traditional soda bread is the addition of baking powder. Which gives it a lighter texture. The inside is pillowy soft and the outside is crunchy(just like grandmas homemade biscuits) and it is delicious with a corned beef and cabbage dinner or with your favorite stew!
Tips for making Cheesy Irish Soda Bread
- Use freshly grated cheddar cheese. The packaged pre-shredded cheese is wonderful in certain situations. But, it has a coating that prevents it from melting as well as the freshly grated cheese.
- I use unsalted butter. I feel that I am able to control the salt amount better by adding it into the dry ingredients myself. The cheese in this recipe also adds some saltiness!
- This bread can be baked in 3-4 mini loaf pans which makes it easier to store in the freezer for later.
- Freezing tips: wrap each loaf in parchment paper and put into ziplock freezer bags. Or wrap in freezer paper! If trying to eliminate plastic: wrap the bread really well in aluminum foil or store in glass containers with silicone lids. Your bread should be safe from freezer burn/odors with both of those options!

Cheesy Irish Soda Bread
A bread that is soft and pillowy on the inside and crunchy on the outside with the flavors of cheddar cheese, butter, and garlic.

Ingredients
- 3 cups flour
- 1/2 cup sugar
- 1 tbsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 1 1/2 cups buttermilk
- 6 tbsp butter, melted
- 1 cup shredded cheddar cheese
- 1 pinch garlic powder
- 1 pinch dried dill, optional
Instructions
- Preheat oven to 350 degrees. Add all dry ingredients into a large mixer bowl except garlic powder, and dill.
- Whisk until well combined.
- Add buttermilk, 4 TBSP melted butter and shredded cheese. Mix just until everything is combined. The dough will be shaggy, similar to biscuit dough.
- Spray a loaf pan with baking spray or butter and flour.
- Pour the bread dough into the pan and bake for 30-35 mins. Check with toothpick for doneness. Sometimes, depending on the day or the oven it may take a little longer to bake!
- When the bread is done remove from the oven and turn out onto a wire rack to cool.
- Mix the remaining 2 TBSP butter, dill, and garlic powder and brush the top of bread while it is still warm. Enjoy!
