Spring is officially here!! I am so excited to cook all the springy recipes:)
Cheesy Tortellini Pasta Salad is crunchy, cheesy, saucy and just exactly what I could eat every day of the week for awhile and then some. This pasta salad can be eaten warm or cold. Perfect for those work lunches..I am soo tired of eating out during work hours. So, I have challenged myself to come up with a few easy, convenient recipes that I can grab out of the fridge when I am running out of the door. I love that it does not have to be warmed because, nobody has time for that;)
Ingredients
- Salad:
- 1 package cheese tortellini pasta
- 1 lb asparagus , amount optional
- 2 cups frozen green peas
- Parmesan cheese , shaved
- Fresh cracked black pepper
- Dressing:
- 1/4 cup olive oil
- Juice of one to two lemons
- 1/4 cup white wine
- 1 TBSP parmesan cheese , grated fine
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions, drain.
- Add frozen peas to warm pasta.
- Drizzle large fry pan with olive oil, turn to medium heat.
- Trim ends from asparagus and rinse. Season with salt and pepper.
- Saute in pan for 5 to 8 minutes.
- Remove from heat and add to pasta and peas.
- Mix dressing ingredients and shake well.
- Pour dressing over salad and gently toss to coat with tongs.
- Serve with shaved parmesan cheese, I used a vegetable peeler.
- Sprinkle with black pepper.
