Irish Potato Pancakes, cakes, latkes ?? I don’t know what to call them but they are delish!
In honor of our Irish ancestors and because I love potatoes so much I decided to make these yummy potato pancakes. I have tried so many versions of this recipe and this flavor combo is our absolute favorite! Simply Organic Rosemary and lots of green onions/scallions really add a pop of flavor! Serve with sour cream – some eat them with applesauce. Either way is sure to be delish.
I named my website chips & pepper because I love homemade chips with lots of pepper so much 😀 I could totally eat potatoes with every meal(but I don’t,ha).

Ingredients
- 4 large Yukon gold potatoes, cooked & mashed
- 1 tsp rosemary, chopped if using fresh
- 1/4 cup half & half
- 2 bunches green onions, thinly sliced
- 2 large eggs, beaten
- 1 tsp salt
- 1 tsp pepper
- 3 tbsp all-purpose flour
- 3-4 tbsp olive oil or butter
Instructions
- In a large mixing bowl stir all ingredients until completely combined.
- Brush cast iron frying pan or griddle with olive oil or butter. Turn heat to med/low.
- Scoop about 1/2 cup potato mixture for each pancake into pan. Do not crowd too close together. Cook on low heat for about 10 minutes, each side. Low and slow allows them to cook all the way through without burning on the outside. This takes longer but is so worth it!
- Pile on a plate and keep warm in the oven. Serve immediately with sour cream 🙂
