Mediterranean Chicken Pasta Salad is filling and healthy. Also it is very delicious and a perfect option for meal prep as it keeps well in the fridge for at least three days. No soggy lettuce here! 🙂
The ingredient list for Mediterranean Chicken Pasta Salad
- Pearl Couscous (which is an Israeli style pasta).
- Tomatoes
- Red onions
- Cucumber
- Black olives
- Feta cheese
- Lemon zest and lemon juice
- Olive oil
- Chicken, I used a rotisserie chicken. Grilled chicken is great also!
That’s the main ingredients and it is so simple to make! I’m usually not a fan of couscous but, this one I love! The taste and texture are the same as any other pasta for the most part. It is much lower in calories than rice(even brown rice) which is handy if you are counting calories!
According to the experts, the Mediterranean eating plan is the healthiest in the world. I know my body would be so thankful if I would eat a Mediterranean diet just part of the time 😄.
I used this recipe for meal prep this week and it was three days of delicious lunches! I’m already planning to add it into next weeks menu. Feel free to add an avocado to the salad right before eating – delicious!
Mediterranean Chicken Pasta Salad
Ingredients
- 2 cups pearl couscous cooked according to pkg directions
- 1/2 English cucumber, sliced
- 1/2 purple onion
- 1/2 cup sliced black olives, drained
- 1 cup cherry tomatoes, halved or quartered
- 1 chicken breast, cooked and sliced
- 1 lemon, juiced and zested
- 1/4 cup olive oil
- 2 tbsp fresh dill, or dried
- 1/4 tsp salt and pepper, or to taste
- 1/4 cup feta cheese, crumbled
Instructions
- Cook couscous according to package directions. Drain and rinse with cold water.
- Mix lemon juice and zest, olive oil, dill, and salt and pepper.
- Pour over couscous and toss to coat.
- Arrange veggies, chicken, and cheese over the pasta. Garnish with extra dill.
- Toss right before serving. Keep tightly covered in the refrigerator for up to three days.
