Peach and Tomato Salad with White Balsamic Vinaigrette

Peach and Tomato Salad with White Balsamic Vinaigrette is made up of fresh peaches, mini cucumbers, cherry tomatoes, feta cheese(optional but I love it!) and the most delicious vinaigrette dressing. Also, homemade croutons are so good with this!

I don’t know why tomatoes and peaches go so well together! I’m sure this is probably a southern thing 😁. Southern or not it is one of my favorites…this was lunch for me a couple of days in a row last weekend. The peaches look just like they do in my photos for at least two days. The vinaigrette keeps them from turning dark. They may stay fresh for up to three days but it doesn’t last that long around here!

Peach and Tomato Salad with White Balsamic Vinaigrette

A refreshing salad starring peaches and tomatoes. The tasty vinaigrette is what brings it all together!

Ingredients

  • 6 large peaches, sliced
  • 4 mini cucumbers, sliced
  • 2 cups cherry tomatoes halved
  • 2 cups french bread cubes, toasted
  • 1/3 cup white balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • 2 tbsp honey
  • 1 tsp dijon mustard
  • 1 tsp Italian seasoning
  • 1/4 tsp garlic powder
  • salt and pepper to taste
  • 1/2 cup feta cheese, crumbled for serving

Instructions

  • Preheat oven to 350 degrees
  • Toss cubed french bread with olive oil and a sprinkle of garlic powder.
  • Layer bread cubes in a parchment-lined baking sheet and bake just until golden brown.
  • Add all of the vinaigrette ingredients to a large bowl and whisk together.
  • Add the peaches, tomatoes, and cucumbers and toss with the vinaigrette.
  • Chill until time to serve. Top each serving with feta cheese and bread cubes.
  • Keep remaining salad in the refrigerator for up to two days. Peaches will stay fresh at least that long if not longer.
