Spicy Chicken Taquitos are fabulous little rolls of yummy goodness!
Y’all… these Chicken Taquitos are just so Cute and so good. The perfect little mini food. They can be eaten as a snack or just go ahead and make a meal from them, because you probably will not be able to stop with just one or two:)
I love to make spicy black beans + rice. And chop up a avocado + green onions + sea salt and lime juice. That makes these chicken taquitos one tasty mexican inspired meal.
A rotisserie chicken makes this recipe super fast and easy. I have tried it with chicken cooked different ways but, the rotisserie wins in the taste department.
Ingredients
- 1 cup diced white onion
- 2 tablespoon olive oil
- 3 jalapeno peppers , chopped and seeded
- 4 tomatillos , chopped
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 3 cups rotisserie chicken , shredded
- 2 cups pepper jack cheese , shredded
- 1 (8oz) package cream cheese, cubed
- 2 tablespoons heavy cream
- 1 lime , juiced
- 1/2 cup fresh cilantro , chopped
- 10 (8 inch) whole wheat tortillas
- olive oil spray
Instructions
- In medium saucepan add olive oil, onion, peppers, tomatillos, salt, and pepper.
- Cook on medium heat for 8 minutes or until onions are cooked through.
- I let everything caramelize just a little.
- Add shredded chicken
- Add heavy cream and cheeses.
- Reduce heat to low.
- Allow cheeses to melt.
- Remove from heat.
- Stir in cilantro and lime juice.
- Spray cast iron pan or griddle with olive oil spray.
- Fry tortillas until slightly browned on both sides.
- Add 2 to 3 tablespoons chicken mixture to tortillas and roll while still warm.
