Fried Chicken makes a delicious sandwich. Add a little homemade tomato jam and a drizzle of lemon mayo and you have an amazingly delicious sandwich. There is so much more flavor going on here with the parmesan cheese breaded chicken and the everything bagel seasoned hamburger buns that are toasted with butter and more parmesan cheese.

Tuscan Fried Chicken Sandwich is definitely a contender for Superbowl Sunday! This sandwich can be served warm or cold. Either way, it is delish!
There are several fun ways to eat this recipe. One of them is to make a rice bowl and add the chicken, tomato jam, and drizzle all of it with the lemon mayo. Another way is to roll everything up into a tortilla shell. One more option is to chop the chicken and add to a tossed salad. This is my favorite I think! I have made this recipe twice recently and made extra chicken both times just so that I could have delicious food for the rest of the week for lunch! So much better than a peanut butter and jelly sandwich ๐. It is so cool to make one recipe and have so many meal options for the next few days.
Tuscan Fried Chicken Sandwich
Ingredients
Lemon Mayo
- 1/4 cup Mayonnaise
- 2 tbsp fresh lemon juice
Tomato Jam
- 1 small onion
- 4 tbsp olive oil
- 3 cloves garlic, minced
- 1 pinch red pepper flakes
- 1/2 cup dry white wine or white cooking wine
- 2 15 oz. can fire-roasted tomatoes
- 1 tbsp dried basil
- 1 tsp dried oregano
Fried Chicken
- 1 cup all-purpose flour
- 1 tbsp seasoned salt
- 1 tsp black pepper
- 3 large eggs
- 1/2 cup grated Parmesan cheese
- 1/2 cup vegetable oil
- 8 chicken tenders or 4 chicken breast
- 4 Everything Bagel Hamburger Buns or bread of choice
- 8 butter lettuce leaves
- 4 tbsp butter
- 4 tbsp grated parmesan cheese
Instructions
Lemon Mayo
- Whisk mayo and lemon juice together until blended well. It should be thin enough to drizzle. Set aside in the refrigerator until time to serve the sandwiches. The mayo can be made a day ahead.
Tomato Jam
- Add the olive oil and onions to a medium-sized saucepan over medium heat. Cook until the onions are translucent. This may take 8-10 minutes.
- Add the garlic and red pepper flakes to the onions and cook for about one minute.
- Pour the white wine into the onion mixture and cook until slightly reduced. Add the tomatoes, basil, and oregano and cook until thickened. Set aside and cool. This can be made one day ahead and kept in the refrigerator.
Fried Chicken
- Mix the flour and seasoned salt together in a wide shallow bowl.
- In a second wide shallow bowl beat 3 eggs and stir in the grated parmesan cheese.
- Pour the 1/2 cup of oil into a deep pot-I used a cast-iron stockpot. Heat the oil.
- While the oil is heating coat the chicken in the egg and cheese mixture. Transfer to the flour and dredge until covered. Shake off the excess flour.
- When the oil is hot enough add the chicken tenders and cook 4-5 minutes per side until they are cooked through and golden brown. Breasts should be cooked 7-8 minutes per side.
- Melt 1 tablespoon of butter in a skillet and sprinkle with grated parmesan cheese. Lay the two sides of the hamburger bun into the skillet cut side down and toast until golden brown.
- Spread the tomato jam onto one side of the bun. Lay two chicken tenders onto the other side of the bun and drizzle with the lemon mayo. Top with a lettuce leaf. Put the two sides together and enjoy!
