White Chocolate Chip Peppermint Cookies

White chocolate is just so fancy for Christmas cookies/candies/cakes.. my favorite colors to decorate the tree with are white, gold, silver, and a little red mixed in. The same goes for my desserts maybe?

This is not a recipe that no one else has thought of or an old family favorite. I have been experimenting with some cookie ideas for the holidays and these white chocolate chip peppermint cookies just seemed so photogenic that I couldn’t resist snapping a few pics. And the cookie recipe turned out so good(soft and chewy)! So, I decided to write that recipe down pronto before forgetting:) And share with the rest of the world, of course!

White Chocolate Chip Peppermint Cookies

Ingredients

  • 2 1/2 cups self-rising flour
  • 1 cup (2 sticks) butter, softened
  • 1/2 cup sugar
  • 3/4 cup brown sugar , packed
  • 2 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups white chocolate chips (ghirardelli)
  • 2 cups white candy coating chips (ghirardelli)
  • 1/2 cup soft peppermint candies , crushed

Instructions

  • Preheat oven to 350 degrees.
  • Mix flour, baking soda, and salt; set aside.
  • In large bowl of mixer, beat butter with sugar and brown sugar at medium speed until creamy.
  • Add vanilla and eggs, one at a time, mixing on low speed.
  • Gradually add dry ingredients; blend on low speed.
  • Stir in white chocolate chips.
  • Refrigerate until dough is firm(optional)
  • Drop onto ungreased cookie sheet.
  • Bake for 10 minutes or until golden brown.
  • Allow cookies to cool 20-30 minutes.
  • In microwave safe bowl, melt candy chips in 30 second increments until melted.
  • Stir until completely smooth.
  • Dip half cookie into candy coating, shake excess off .
  • Sprinkle peppermint pieces over candy coating.
  • Allow to cool on wire racks.
